Making fresh pasta at home is simpler than it may seem. With just flour, eggs and a little patience, you can create silky pasta with a delicate texture and a flavour that dried pasta cannot completely replicate.
Ingredients
- 200g tipo 00 flour
- 2 large eggs
- A small pinch of salt
- Extra flour for dusting
Step 1: Make the Dough
Place the flour on a clean work surface and make a well in the centre. Add the eggs and a small pinch of salt.
Using a fork, gradually mix the eggs with the flour from the inside of the well outward. Continue mixing until a rough dough begins to form.
Step 2: Knead the Dough
Bring the dough together with your hands and knead it for approximately eight to ten minutes. The dough should become smooth, elastic and slightly firm.
If the dough feels too dry, wet your hands lightly and continue kneading. Avoid adding too much water at once.
Step 3: Rest the Dough
Wrap the dough in reusable food wrap or cover it with an overturned bowl. Let it rest at room temperature for at least 30 minutes.
Resting allows the gluten to relax and makes the dough easier to roll.
Step 4: Roll the Pasta
Divide the dough into smaller portions. Flatten one portion with your hands, then roll it using a pasta machine or rolling pin.
Continue rolling until the sheet is thin but not transparent. Dust lightly with flour if the dough begins to stick.
Step 5: Cut the Pasta
The pasta sheet can be cut into tagliatelle, fettuccine or other shapes. If making filled pasta, keep the sheets slightly wider and thinner.
Dust the finished pasta with flour and arrange it loosely into small nests.
Step 6: Cook the Pasta
Bring a large pot of salted water to a boil. Fresh pasta cooks quickly, usually within two to four minutes depending on its thickness.
Taste a piece before draining. The pasta should be tender but still slightly firm in the centre.
